Simple Vegan Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 2 tablespoons chia seeds
  • 1 1/2 cups soy milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract

Toppings

  • 1 banana
  • Handful of peanuts

Preparation

  1. Mix all ingredients except banana and peanuts in a bowl.

  2. Stir well to combine.

  3. Refrigerate overnight.

  4. In the morning, if the mixture is too thick, add more milk.

  5. If desired, use warm milk to make it warm.

  6. Top with banana and peanuts, then serve.
