Peanut Butter Banana Snickers Overnight Oats

Ingredients

  • 1 banana mashed
  • 1 heaping spoonful peanut butter (more for the jars)
  • 1 1/2 cups gf oats
  • 1/4 cup chia seeds
  • 1 scoop protein powder
  • 1/4 cup cottage cheese
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 tsp maple syrup
  • Pinch salt
  • 2 1/4 cup soy milk

Topping

  • 6 tbsp RUNNY peanut butter
  • 1/2 cup dark chocolate melted
  • 2 tbsp chopped peanuts
  • Flaky sea salt

Preparation

  1. Add all the oat ingredients to a bowl.

  2. Whisk to combine until mixture is smooth.

  3. Place the bowl in the fridge for at least 2 hours until mixture is thick.

  4. Using a rubber spatula, smear peanut butter on the sides of the jars.

  5. Equally measure the oats mixture into 3-4 jars.

  6. If peanut butter is thick, add a teaspoon of olive oil and heat in the microwave for 30 seconds until pourable.

  7. Top the oats with peanut butter.

  8. Finish with melted chocolate.

  9. Sprinkle with flaky salt and peanuts.

  10. Place back in the fridge for 15 minutes until chocolate is set.

Tips

  1. This is a rich breakfast that can be split for use as both breakfast and dessert.
