Creamy Pitaya Chia Pudding with Blood Orange

Ingredients

  • 1 cup roasted almond milk
  • 50ml chia seeds
  • 1 tbsp pitaya powder
  • 1/3 tsp vanilla powder
  • 1-2 tbsp agave syrup
  • 1 tsp happy belly powder (optional)
  • 2-3 blood oranges

Preparation

  1. Pour your chia seeds into a bowl.

  2. Add a little bit of the almond milk.

  3. Whisk until the chia seeds have activated and thicken a bit.

  4. Add some more milk and the remaining ingredients.

  5. Whisk together for a while until it starts to thicken.

  6. Let it sit and rest for about 30 minutes.

  7. Slice your blood oranges and fill the bottom of your serving jars with them.

  8. Pour over the chia pudding.
