Blue Marbled Coconut Chia Pudding

Ingredients

  • 3 teaspoons blue spirulina
  • 2 tablespoons chia seeds
  • 1/2 cup coconut milk or other plant-based milk
  • 2 tablespoons coconut yogurt
  • 3 teaspoons coconut nectar
  • 2 teaspoons desiccated coconut
  • 1 cup frozen or fresh berries

Preparation

  1. To make the berry coulis, add the berries to a pan on low heat, squish them, and stir in 2 teaspoons of sweetener and the blue spirulina

  2. Mix the remaining ingredients to make the coconut chia pudding

  3. Add the berry coulis to the container first, then pour the coconut chia pudding over it to create the marbled effect

Tips

  1. Adding extra berry coulis can enhance the marbling effect, as the blue color will rise when the pudding is poured over it
