Vegan Matcha Chia Pudding
Ingredients
- 1/3 tsp matcha
- 1/2 cup soy milk
- 1/2 cup soy yogurt divided
- 1.5 tbsp chia seeds
- 1/2 cup frozen mango
- 2 tbsp water
- option to add sweetener
Preparation
Combine the matcha and milk and whisk to remove clumps
In a jar, combine 1/4 cup yogurt, chia seeds, sweetener if using and matcha milk. Allow to set in the fridge overnight
Blend the mango and water
Top the chia pudding with the rest of the yogurt and mango puree, and enjoy
