Pineapple Mint Chia Pudding
Ingredients
- 1/4 cup pineapple
- 250 ml coconut milk
- 2 tablespoons coconut sugar
- 3 sprigs mint
- 1/2 cup chia seeds
Preparation
Chop the pineapple into pieces, removing the center part.
Place the pineapple in a blender with coconut milk, sugar, and mint. Blend until smooth.
With the blender running, add the chia seeds and blend until well incorporated but not crushed too much.
Pour the mixture into bowls or jars and refrigerate for at least 4 hours or overnight.
