Simple Three-Ingredient Rhubarb Jam

Ingredients

  • 8 rhubarb stalks
  • 3 tbsp coconut sugar
  • 3 tbsp chia seeds
  • A splash of water

Preparation

  1. Wash and chop the rhubarb stalks into small pieces.

  2. In a pan with a lid, combine the chopped rhubarb, coconut sugar, and a splash of water.

  3. Cover and cook over medium heat until the rhubarb is soft and broken down.

  4. Stir in the chia seeds and continue cooking until the mixture thickens to a jam-like consistency.

  5. Remove from heat, let cool, and transfer to a clean jam jar for storage.
