Simple Three-Ingredient Rhubarb Jam
Ingredients
- 8 rhubarb stalks
- 3 tbsp coconut sugar
- 3 tbsp chia seeds
- A splash of water
Preparation
Wash and chop the rhubarb stalks into small pieces.
In a pan with a lid, combine the chopped rhubarb, coconut sugar, and a splash of water.
Cover and cook over medium heat until the rhubarb is soft and broken down.
Stir in the chia seeds and continue cooking until the mixture thickens to a jam-like consistency.
Remove from heat, let cool, and transfer to a clean jam jar for storage.
