Vegan Parfait with Nice Cream and Chia Pudding
Ingredients
Chia seed pudding
- 3 tbsp chia seeds
- 1 tsp vanilla protein powder
- 1 dl oatmilk
Nice cream
- 2 frozen bananas
- 1 tbsp frozen blueberries
- A splash of oatmilk
Parfait additions
- blueberries
- passion fruit
Preparation
Mix the chia seed pudding ingredients together in a bowl and set in the fridge for 15 minutes until gooey.
Blend the nice cream ingredients together in a blender or food processor.
Assemble the parfait by layering the chia seed pudding, nice cream, blueberries, and passion fruit in a glass or bowl.
Notes
Frozen blueberries from summer picking can be used for freshness in this vegan breakfast option.
