Vegan Parfait with Nice Cream and Chia Pudding

Ingredients

Chia seed pudding

  • 3 tbsp chia seeds
  • 1 tsp vanilla protein powder
  • 1 dl oatmilk

Nice cream

  • 2 frozen bananas
  • 1 tbsp frozen blueberries
  • A splash of oatmilk

Parfait additions

  • blueberries
  • passion fruit

Preparation

  1. Mix the chia seed pudding ingredients together in a bowl and set in the fridge for 15 minutes until gooey.

  2. Blend the nice cream ingredients together in a blender or food processor.

  3. Assemble the parfait by layering the chia seed pudding, nice cream, blueberries, and passion fruit in a glass or bowl.

Notes

  1. Frozen blueberries from summer picking can be used for freshness in this vegan breakfast option.
