Coconut Porridge with Caramelized Pineapple
Ingredients
Porridge
- 1 cup rolled oats (gluten free)
- 1/3 cup chia seeds
- 1 1/2 cups coconut milk (about 1 can)
- 1 cup coconut water
- 1 tbsp coconut sugar
Pineapple
- 1 pineapple, peeled and cut into chunks
- 1 tbsp coconut oil
- 1 tbsp coconut sugar
Toppings
- Toasted coconut flakes (optional)
- Flaked almonds or other crunchy items (optional)
Preparation
Start cooking the pineapple by putting all pineapple ingredients into a frying pan over medium-high heat and cook for about 20 minutes, turning the pieces regularly until golden and caramelised.
After 10 minutes of cooking the pineapple, make the porridge by putting all porridge ingredients in a pan over medium to low heat and cook for about 10 minutes until thick and creamy.
Serve the porridge topped with the caramelised pineapple and optional toppings.
Tips
If you want the porridge looser, add more coconut water to taste.
