Easy Carbonara-Style Pasta Frittata
Ingredients
- bucatini, cooked
- 50g ewes cheese
- chives
- fresh ground black pepper
- pre-cooked bacon lardons
- pinch of salt
- 3 beaten eggs
- olive oil for spraying
Toppings
- additional ewes cheese
- parsley
- more black pepper
- extra virgin olive oil
Preparation
Cook bucatini for 8 minutes and drain.
Stir the cheese through the pasta until melted.
Add chives and fresh ground black pepper.
Add pre-cooked bacon lardons and a pinch of salt.
Remove from heat and stir in the beaten eggs.
Spray an omelette pan with a little olive oil and heat.
Pour the mixture into the pan and cook with a lid on.
Slide the frittata onto a flat baking tray and flip it back into the pan.
Cook for an additional 5 minutes.
Plate the frittata and top with more cheese, parsley, black pepper, and a drizzle of extra virgin olive oil.
