Easy Carbonara-Style Pasta Frittata

Ingredients

  • bucatini, cooked
  • 50g ewes cheese
  • chives
  • fresh ground black pepper
  • pre-cooked bacon lardons
  • pinch of salt
  • 3 beaten eggs
  • olive oil for spraying

Toppings

  • additional ewes cheese
  • parsley
  • more black pepper
  • extra virgin olive oil

Preparation

  1. Cook bucatini for 8 minutes and drain.

  2. Stir the cheese through the pasta until melted.

  3. Add chives and fresh ground black pepper.

  4. Add pre-cooked bacon lardons and a pinch of salt.

  5. Remove from heat and stir in the beaten eggs.

  6. Spray an omelette pan with a little olive oil and heat.

  7. Pour the mixture into the pan and cook with a lid on.

  8. Slide the frittata onto a flat baking tray and flip it back into the pan.

  9. Cook for an additional 5 minutes.

  10. Plate the frittata and top with more cheese, parsley, black pepper, and a drizzle of extra virgin olive oil.
