Easy No-Bake Cherry Cheesecake
Ingredients
Base
- 250g gingerbread cookies
- 50g coconut oil or butter
Cheese filling
- 1 kg cheesecake curd cheese
- 2 cherry gelatin packets
- 50g sugar
- 300ml hot water
Topping
- 1 jar cherry fruit topping (350g)
Preparation
Dissolve the gelatin in water and set aside.
Crush the cookies and mix with the melted fat.
Spread the mixture on the bottom of the pan.
Transfer the cheese to a mixer bowl, add sugar and the dissolved gelatin, and mix until combined.
Spread the cheese mixture on the cookie base.
Chill for 2 hours, then add the fruit topping before serving.
