Fluffy Pumpkin Protein Pancakes
Ingredients
- 1 egg
- 1/4 cup quinoa flour
- 2 tablespoons coconut flour
- 1/3 cup pumpkin purée
- 1 scoop vegan chocolate bliss protein powder
- Water (3/4 to 1 cup, adjust for consistency)
- 1/2 teaspoon baking powder
- Cinnamon
Toppings
- almond butter
- strawberries
- carmel popped kind snacks
- sugar-free pancake syrup
Preparation
Mix all dry ingredients together in a bowl.
Mix egg, pumpkin purée, and a portion of the water in another bowl.
Combine wet and dry mixtures until smooth, adding more water to achieve desired consistency.
Heat a non-stick pan or griddle over medium heat.
Scoop batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve the pancakes with the toppings.
