Light and Refreshing Creamy Coleslaw Side Dish

Ingredients

  • 1/4 red cabbage, finely shredded
  • 1/4 white cabbage, finely shredded
  • 2 large carrots, grated
  • 3 tablespoons Greek yoghurt
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Squeeze of lemon juice

Preparation

  1. To make it even lighter, use fat-free Greek yoghurt and light mayonnaise.

  2. In a large bowl, mix together the cabbage and carrots.

  3. In a smaller bowl, mix together the yoghurt, mayonnaise, mustard, salt, and lemon.

  4. Mix well, using hands if preferred, and taste to add more salt or lemon if needed.
