Light and Refreshing Creamy Coleslaw Side Dish
Ingredients
- 1/4 red cabbage, finely shredded
- 1/4 white cabbage, finely shredded
- 2 large carrots, grated
- 3 tablespoons Greek yoghurt
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Pinch of salt
- Squeeze of lemon juice
Preparation
To make it even lighter, use fat-free Greek yoghurt and light mayonnaise.
In a large bowl, mix together the cabbage and carrots.
In a smaller bowl, mix together the yoghurt, mayonnaise, mustard, salt, and lemon.
Mix well, using hands if preferred, and taste to add more salt or lemon if needed.
