Grilled Chicken Lettuce Tacos with Cabbage and Apple Slaw

Ingredients

For the Chicken Lettuce Tacos

  • Grilled chicken
  • Lettuce leaves

For the Cabbage and Apple Slaw

  • 1 cup shredded red cabbage
  • 1 small apple, chopped into sticks
  • 1/2 cup jicama, chopped into sticks
  • 1 small cucumber, chopped into sticks
  • 1/3 cup chopped cilantro
  • 3 radishes, chopped into sticks
  • 2 tablespoons mayonnaise or Greek yogurt
  • Juice of one lime
  • Few drops of hot sauce
  • Salt to taste
  • Chopped almonds (optional)

Preparation

Prepare the Grilled Chicken

  1. Grill the chicken until cooked through.

  2. Shred the chicken into bite-sized pieces.

Assemble the Tacos

  1. Take lettuce leaves and use them as taco shells.

  2. Fill each lettuce shell with the shredded grilled chicken.

Make the Cabbage and Apple Slaw

  1. In a bowl, combine shredded red cabbage, chopped apple, jicama sticks, cucumber sticks, chopped cilantro, and radish sticks.

Prepare the Dressing

  1. In a separate bowl, mix mayonnaise or Greek yogurt, lime juice, hot sauce, and salt.

Combine and Serve

  1. Pour the dressing over the cabbage and apple mixture.

  2. Toss the slaw well to coat everything in the dressing.

  3. Optionally, add chopped almonds for extra texture.

Serve

  1. Spoon the cabbage and apple slaw onto the grilled chicken lettuce tacos.
