Refreshing Persian Saffron Seed Sherbet

Ingredients

  • Saffron: 1 teaspoon
  • Khakshir: 2 tablespoons
  • Tukhm-e-sharbati: 2 tablespoons
  • Water: 2 cups
  • Sugar or honey (optional): to taste
  • Lemon juice (optional): to taste
  • Rose water (optional): to taste

Preparation

  1. Dissolve saffron in a tablespoon of warm water and let it sit for 15 minutes to release its flavor and color.

  2. Soak khakshir and tukhm-e-sharbati in a bowl with water for 10 minutes until soft. Then rinse the khakshir with water to remove impurities.

  3. Blend the soaked khakshir and tukhm-e-sharbati with a mixer for four seconds.

  4. Add the dissolved saffron and sugar.

  5. Add water to the mixture and stir well until fully combined.
