Refreshing Persian Saffron Seed Sherbet
Ingredients
- Saffron: 1 teaspoon
- Khakshir: 2 tablespoons
- Tukhm-e-sharbati: 2 tablespoons
- Water: 2 cups
- Sugar or honey (optional): to taste
- Lemon juice (optional): to taste
- Rose water (optional): to taste
Preparation
Dissolve saffron in a tablespoon of warm water and let it sit for 15 minutes to release its flavor and color.
Soak khakshir and tukhm-e-sharbati in a bowl with water for 10 minutes until soft. Then rinse the khakshir with water to remove impurities.
Blend the soaked khakshir and tukhm-e-sharbati with a mixer for four seconds.
Add the dissolved saffron and sugar.
Add water to the mixture and stir well until fully combined.
