Turkish Delight Candy

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 1/4 teaspoon lemon salt
  • 1/4 teaspoon lemon juice
  • 1 cup starch
  • 1 cup water
  • 1 teaspoon rose water
  • 1 teaspoon orange blossom water
  • 3 ground mastic pieces
  • 1/2 cup sugar

For shaping

  • Starch

For decoration

  • Food coloring as desired

Preparation

  1. Combine sugar, water, lemon juice, and lemon salt in a saucepan and bring to a boil

  2. Mix starch with water to form a smooth slurry

  3. Gradually add the slurry to the boiling syrup and cook over medium heat until thickened and clear

  4. Stir in rose water, orange blossom water, and ground mastic until well incorporated

  5. Pour the mixture into a greased pan and let it set until firm

  6. Cut into squares and dust with starch for shaping

  7. Decorate with food coloring as desired
