Homemade Turkish Delight Candy

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 1/4 teaspoon lemon salt
  • 1/4 teaspoon lemon juice
  • 1 cup starch
  • 1 cup water
  • 1 teaspoon rose water
  • 1 teaspoon orange blossom water
  • 3 ground mastic crystals
  • 1/2 cup sugar

For shaping

For decoration

  • food coloring as desired

Preparation

  1. Combine sugar, water, lemon salt, and lemon juice in a saucepan and bring to a boil until sugar dissolves.

  2. In a separate bowl, mix starch with water to create a smooth slurry.

  3. Slowly add the slurry to the boiling syrup, stirring constantly to avoid lumps.

  4. Incorporate mastic, rose water, and orange blossom water into the mixture.

  5. Cook over low heat, stirring frequently, until the mixture thickens and pulls away from the sides of the pan.

  6. Pour the thickened mixture into a pan dusted with starch and allow it to cool and set.

  7. Once set, cut into squares and dust with additional starch for shaping.

  8. Decorate with food coloring if desired.
