Soy Mince Rice Bowl
Ingredients
- 1/2 cup textured vegetable protein (TVP)
- 1/2 tsp Asian mushroom stock powder
- 1 tbsp soy sauce
- Splash of dark soy sauce (optional, for colour)
- 2 tsp brown sugar
- 1/8 tsp ground black pepper
- 1 whole star anise
- 1 tsp cornflour/cornstarch
- 1/2 cup water
- 1 thumb ginger, peeled and grated
To serve
- Sesame oil
- Green onion
- Cucumber
- Sesame seeds
Preparation
Before prepping the TVP, make sure to start cooking the rice first, preferably Thai jasmine rice.
Add TVP and stock powder to a bowl and pour enough boiling water to just cover; set aside.
Combine soy sauce, brown sugar, black pepper, star anise, cornflour, and water in another bowl.
Heat a frypan over medium-high heat, add a light drizzle of oil, then add ginger and rehydrated TVP; fry for 1 minute.
Add the sauce and cook for 2-3 minutes or until thickened.
Serve the TVP over freshly cooked rice, drizzle with sesame oil, and garnish with cucumber, green onion, and sesame seeds.
Tips
TVP is versatile, super high in protein, cheap, and easy to use; it can be substituted with crumbled firm tofu if unavailable.
