15-Minute Udon Noodle Stir-Fry with Vegetables and Plant-Based Mince

Ingredients

  • 1 pack udon noodles
  • 1 large carrot, chopped
  • 1 yellow pepper, chopped
  • 2 cups broccoli florets
  • 50 g @flexiblefoodsau plant-based mince
  • 200 ml of water
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 2 tablespoons sesame seed oil
  • fresh coriander, for serving
  • sesame seeds and chili flakes

Preparation

  1. Cook noodles according to the package directions, drain and set aside.

  2. In a frying pan over medium heat add carrots, peppers and broccoli, season to taste and cook for 7 minutes until tender.

  3. Add in plant-based mince and water, cook another 5 minutes.

  4. Add in soy sauce, maple syrup, sesame oil and noodles.

  5. Stir to combine and cook for another couple of minutes.

  6. Serve warm garnished with fresh coriander and sprinkled with sesame seeds and chili flakes.
