Crispy Baked Potatoes with Fresh Toppings
Ingredients
- 6-7 small white potatoes
- Mixed herbs
- Onion powder
- Salt
- 1 bell pepper
- 5 cherry tomatoes
- Handful fresh coriander
- Handful fresh lettuce
- 1/2 avocado
- 2-3 tbsp hummus
Preparation
Preheat oven to 250 degrees Celsius.
Toss potatoes in herbs and spices and lay out on a lined baking tray. Bake for 20-30 minutes or until golden and crunchy.
Place potatoes on a plate and layer on the chili and other ingredients, then enjoy.
