Crispy Baked Potatoes with Fresh Toppings

Ingredients

  • 6-7 small white potatoes
  • Mixed herbs
  • Onion powder
  • Salt
  • 1 bell pepper
  • 5 cherry tomatoes
  • Handful fresh coriander
  • Handful fresh lettuce
  • 1/2 avocado
  • 2-3 tbsp hummus

Preparation

  1. Preheat oven to 250 degrees Celsius.

  2. Toss potatoes in herbs and spices and lay out on a lined baking tray. Bake for 20-30 minutes or until golden and crunchy.

  3. Place potatoes on a plate and layer on the chili and other ingredients, then enjoy.
