Hash Brown Avocado Toasts

Ingredients

  • your favorite frozen hash browns
  • 1-2 tablespoons olive/avocado oil
  • 1-2 avocados, sliced/mashed
  • broccolini/broccoli florets
  • 1 cup brussels sprouts, sliced in half
  • everything bagel seasoning
  • vegan parmesan cheese
  • microgreens

Preparation

  1. Heat a large skillet over medium heat

  2. Add the oil

  3. Sautee the broccoli and brussels sprouts, tossing occasionally until they are soft and tender, but not mushy, then set aside

  4. Slice/mash your avocado

  5. Add the sliced/mashed avocado on top of the hash browns, then top with sauteed brussels sprouts and broccoli

  6. Sprinkle, to taste, everything bagel seasoning and vegan parmesan cheese over top

  7. Garnish with fresh microgreens
