Spiced Roast Potatoes
Ingredients
- 1kg potatoes, diced into large cubes or cut into wedges
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1/2 dried thyme
Preparation
Scrub the potatoes well, remove any eyes and leave the skin on if possible; potato skin contains more fibre + nutrients, plus they taste better. Cut into large cubes or wedges, rinse and allow to drain in a colander thoroughly
Place the potatoes in a bowl, add oil + spices/herbs and toss the potatoes to coat
Place coated potato in an airfryer basket and cook for 20 - 25 mins at 180°C. Alternatively oven bake on a tray at 200°C/gas mark 6 for 30 - 40 mins until the potatoes are golden brown and the skin is slightly crispy
Serve as a side to your main meals. Can also be served for breakfast in place of hash browns/waffles with a full English
