Vegan Christmas Wellington Roast
Ingredients
- 2 tbsp apple cider vinegar
- 1 onion
- 3 cloves of garlic
- 200g tempeh or tofu
- 600g mushrooms
- 70g walnuts
- 4 tbsp nutritional yeast
- seasoning (e.g. turmeric, pepper, curry, chili, salt etc.)
- 2 tbsp mustard
- 250g spinach
Preparation
Chop the onion, garlic, and mushrooms.
Sauté the onion and garlic until softened.
Add mushrooms and cook until browned.
Crumble the tempeh or tofu.
Mix all ingredients together in a bowl.
Form the mixture into a loaf shape.
Bake for about 20 minutes.
