1 Pound of Carrots

Ingredients

  • wash 1 pound of carrots then dry, peel and slice in half length-wise.
  • whisk seasoning together in a bowl:
  • 2 tbsp avocado oil (or evoo)
  • 1 tbsp coconut aminos
  • 1 tsp dried oregano
  • 1/4 tsp ginger powder
  • dash of garlic powder
  • pinch of salt and pepper

Preparation

  1. Wash 1 pound of carrots then dry, peel and slice in half length-wise

  2. Whisk seasoning together in a bowl: 2 tbsp avocado oil (or EVOO), 1 tbsp coconut aminos, 1 tsp dried oregano, 1/4 tsp ginger powder, dash of garlic powder, pinch of salt and pepper.

  3. Pour over carrots on parchment paper lined cooking sheet. Roast at 350F on middle shelf for 30 mins. Top with sesame seeds and vegan cashew parm
