Creamy Veggie Udon Noodles with Sauce
Ingredients
Sauce
- 1 roasted bell pepper
- 2 cups of chopped tomatoes
- 1 garlic clove
- 1/2 tsp onion powder
- fresh ginger (optional)
- 2 tbsp tamari sauce
- 1 tbsp of red miso paste
- pepper to taste
- 1/2 cup plant based milk (I used almond milk)
Veggies
- yellow bell peppers
- onions
- broccoli
- mushrooms
- carrots
- 600g of cooked udon noodles
Preparation
Blend all sauce ingredients together to make the sauce.
Sauté the veggies until tender.
Mix the sauce, veggies, and udon noodles together.
Let the mixture simmer for 15 minutes.
Add Chile de árbol for spice if desired.
