Easy Vegetable Fritters with Yogurt Topping

Ingredients

  • 2 medium zucchinis
  • 1 carrot
  • 1 potato
  • 2 cloves garlic, minced
  • 1/2 cup vegan butter or spread
  • 3 tbsp rice flour
  • 1 tbsp nutritional yeast
  • Salt & pepper

Preparation

  1. Grate the zucchini and add it to a bowl with a generous sprinkle of salt. Let it sit for 10 minutes.

  2. Grate the carrot and potato. Squeeze out all the water from the zucchini using a kitchen towel, then mix it together with the grated carrot and potato.

  3. Add the minced garlic, nutritional yeast, salt, and pepper, and mix well.

  4. Melt the butter and add it to the bowl with the flour. Mix together until well combined.

  5. Heat the oil in a pan over medium heat. Place a chunk of the mixture onto the pan and flatten it gently with a spatula.

  6. Cook until brown on both sides, about 10 minutes per side. Remove and place on a plate lined with paper towel to absorb any extra oil.

  7. Repeat the process with the remaining mixture and serve.
