Greek Chicken Salad
Ingredients
- 6 cups chopped lettuce
- 450 gm chicken breast boneless skinless
- 2 cup cherry tomato
- 1 cup chopped seedless cucumber
- 1/2 medium red onion
- 1/2 kalamata olives
- 1/2 cup feta cheese
- fresh oregano leaves
- 1/4 cup olive oil
- 3 tbsp red vinegar
- 1 garlic minced
- 2 tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Put chicken breast in a ziplock bag
Add all ingredients of dressing to small jar & shake well
Pour 1/3 of this dressing mixture over the chicken & mix to combine
Keep refrigerated to marinate for at least 1 hour
Keep remaining 2/3 of the mixture in the jar , refrigerated to use as a dressing
Heat large nonstick pan over medium heat
Add chicken &cook for 8-10 minutes per side
In a bowl add the lettuce then top with tomato, cucumber, onion, olives & sliced chicken & sprinkle with crumbled feta cheese
Drizzle the dressing over the salad & serve immediately & enjoy
