Greek Chicken Salad

Ingredients

  • 6 cups chopped lettuce
  • 450 gm chicken breast boneless skinless
  • 2 cup cherry tomato
  • 1 cup chopped seedless cucumber
  • 1/2 medium red onion
  • 1/2 kalamata olives
  • 1/2 cup feta cheese
  • fresh oregano leaves
  • 1/4 cup olive oil
  • 3 tbsp red vinegar
  • 1 garlic minced
  • 2 tbsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  1. Put chicken breast in a ziplock bag

  2. Add all ingredients of dressing to small jar & shake well

  3. Pour 1/3 of this dressing mixture over the chicken & mix to combine

  4. Keep refrigerated to marinate for at least 1 hour

  5. Keep remaining 2/3 of the mixture in the jar , refrigerated to use as a dressing

  6. Heat large nonstick pan over medium heat

  7. Add chicken &cook for 8-10 minutes per side

  8. In a bowl add the lettuce then top with tomato, cucumber, onion, olives & sliced chicken & sprinkle with crumbled feta cheese

  9. Drizzle the dressing over the salad & serve immediately & enjoy
