Kale Soup with Vegetable Balls

Ingredients

  • 1 cup of cooked vegetable balls (i used ikea balls but made 3 balls from one ball)
  • 1/2 chopped onion
  • 3 crushed garlic cloves
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 kale bunch cut into small pieces
  • 1 small potato, diced
  • 2 bay leaves
  • 1 teaspoon mixed spices (onions, garlic, nutmeg or other spices you love)
  • 1 teaspoon cumin
  • salt and white pepper to taste
  • 3 tablespoons of any herbs (as desired)
  • 1 tablespoon oil
  • 1 cup cooked white beans (or any legumes as desired)
  • 4 cups of warm water (one liter)
  • 1 juiced lemon

Preparation

  1. Sauté onions in oil until withered

  2. Add all vegetables and sauté for 3 minutes

  3. Add water and spices and cook over a high heat to a boil

  4. Reduce heat and cook for 15 minutes

  5. Add herbs, beans and vegetable balls without mixing

  6. After a minutes, turn of the heat, add the lemon juice and enjoy *you can add or not use any of the vegetables mentioned
