Kale Soup with Vegetable Balls
Ingredients
- 1 cup of cooked vegetable balls (i used ikea balls but made 3 balls from one ball)
- 1/2 chopped onion
- 3 crushed garlic cloves
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/2 kale bunch cut into small pieces
- 1 small potato, diced
- 2 bay leaves
- 1 teaspoon mixed spices (onions, garlic, nutmeg or other spices you love)
- 1 teaspoon cumin
- salt and white pepper to taste
- 3 tablespoons of any herbs (as desired)
- 1 tablespoon oil
- 1 cup cooked white beans (or any legumes as desired)
- 4 cups of warm water (one liter)
- 1 juiced lemon
Preparation
Sauté onions in oil until withered
Add all vegetables and sauté for 3 minutes
Add water and spices and cook over a high heat to a boil
Reduce heat and cook for 15 minutes
Add herbs, beans and vegetable balls without mixing
After a minutes, turn of the heat, add the lemon juice and enjoy *you can add or not use any of the vegetables mentioned
