Vegan Carrot Bacon Breakfast Alternative

Ingredients

  • 1 large carrot
  • 1 tbsp tahini
  • 1 tbsp light oil — we recommend rapeseed or flaxseed oil!
  • 1 tbsp maple syrup
  • 1.5 tsp soy sauce, tamari, or coconut aminos
  • 1 tsp liquid smoke

Preparation

  1. Blitz the marinade in a blender using all ingredients except the carrot.

  2. Slice the carrot into thin slices.

  3. Soak the carrot slices in the marinade for around 30 minutes.

  4. Preheat the oven to 200C.

  5. Bake the carrot 'bacon' for 15-20 minutes.

  6. Enjoy your vegan carrot bacon!
