Vegan Herby Soft Cheese

Ingredients

  • Soy milk
  • Lemon juice

Optional additions

  • Spices
  • Herbs

Preparation

  1. Bring soy milk to a boil.

  2. Remove from heat and immediately add lemon juice.

  3. Let it sit for a few minutes.

  4. Strain through a sieve or colander to separate the curds.

  5. For the herby version, add spices and herbs, then refrigerate, optionally under pressure, to firm up.
