Vegan Weekend Sandwich with Vegetables

Ingredients

  • Romaine lettuce
  • Spinach
  • Arugula
  • Tomato
  • Shredded carrots
  • Beets
  • Yellow squash
  • Zucchini
  • Vegan cheddar cheese
  • Vegan mayo
  • Jalapenos
  • Harissa
  • Whole grain bread

Preparation

  1. Wash and prepare all vegetables by slicing or shredding as needed

  2. Toast the whole grain bread if desired for added crunch

  3. Spread vegan mayo evenly on one or both slices of bread

  4. Layer the greens (romaine lettuce, spinach, arugula) and vegetables (tomato, shredded carrots, beets, yellow squash, zucchini) on the bread

  5. Add jalapenos and vegan cheddar cheese for flavor and texture

  6. Drizzle or spread harissa to taste for spice

  7. Assemble the sandwich by topping with the second slice of bread and cut in half if preferred
