Fluffy Banana Pancakes for One

Ingredients

  • 200g mashed overripe banana
  • 100g self-raising flour (gluten-free if required)
  • A squeeze of lemon juice
  • 1 tsp baking powder (gluten-free if required)
  • 100ml milk (soy milk recommended)
  • A splash of water (optional, for consistency)
  • Coconut oil (for frying)

Preparation

  1. Chop banana and microwave for 1 minute until mushy. Use overripe bananas, preferably from frozen for natural sweetness.

  2. Put all ingredients into a bowl and mix until smooth.

  3. Heat coconut oil in a pan and fry pancakes on each side for about a minute.

  4. Top with desired toppings, such as maple syrup and dairy-free yoghurt.
