Mushroom & Butterbean Combo

- 150g mixed mushrooms
- 3 cloves of garlic
- 1/2 brown onion
- 1 tbsp chopped chives
- 4 tbsp olive oil
- Salt & pepper
- Water

Method
Chop the onions & 3 cloves of garlic roughly & brown off in a frying pan - be sure to get good caramelisation this really gives the mash a depth of flavour !!! Drain the butterbeans & pop in a food processor with the garlic & onion. Blitz until a rough mash is achieved, add some water & 3 tbsp of olive oil to loosen. Scrape back into the pan you used to cook onion & garlic & heat gently
Separately, slice the remaining garlic cloves finely & roughly chop some of the mushrooms but leave some whole. Fry off the garlic & then add in the mushrooms in the remaining 1 tbsp of oil. Fry until cooked & slightly caramelised & then serve on top of the butterbean mash topped with some chopped chives ! Have a hunk of bread ready to mop up the left overs
