Vegan Microwave Mug Cake Stacked Treat

Ingredients

  • 7 Tbls flour
  • 2 Tbls peanut butter
  • 2 Tbls maple syrup
  • 1 tsp baking powder
  • 8 Tbls nut milk
  • 2 Tbls apple sauce

Frosting

  • 1 stick vegan butter (1/2 cup)
  • 1/2 tsp vanilla extract
  • 2 1/2 - 3 cups sifted organic powdered sugar
  • 3-4 Tbsp full fat coconut milk or other dairy-free milk

Preparation

  1. Spray bowl with nonstick oil or coconut oil. Mix all ingredients in a separate bowl until smooth, then pour into prepared ramekins.

  2. Microwave on high for 60 seconds. It should rise and be fluffy. If not, continue cooking in 15-second intervals until done. Add your choice of toppings!

  3. To make a stacked cake, prepare two mug cakes as described. Pop them out of the ramekins, frost one layer, top with blueberry compote, stack the second cake, frost it, and add more compote and decorations like pansies.

Frosting method

  1. Add softened vegan butter to a large mixing bowl and cream until light and fluffy.

  2. Add vanilla extract and mix once more to combine.

  3. Add sifted powdered sugar in 1/2 cup measurements and continue mixing until well combined and fluffy, scraping down sides as needed.

  4. If too thick, add 1 Tbsp at a time of dairy-free milk until desired consistency is achieved.
