Vegan Peanut Sauce with Veggies and Noodles

Ingredients

  • 1 tablespoon garlic chili sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon plus 1 teaspoon rice wine vinegar
  • 2 tablespoons sesame oil
  • 1/4 cup low-sodium soy sauce or tamari
  • 1/3 cup smooth peanut butter
  • 1 minced garlic clove
  • 1-1/4 teaspoon minced ginger
  • a little water
  • salt to taste

Preparation

  1. Whisk together all ingredients until fully incorporated.

  2. Heat the mixture on low in a small saucepan.

  3. Add a little water and stir while heating.

  4. Season with salt to taste.

  5. Serve with sautéed vegetables, noodles, and desired protein for 2 servings.
