Honey Soy Marinated Bacon Wrapped Chicken Thighs

Ingredients

Chicken and bacon

  • 6 boneless skinless chicken thighs roughly the same size
  • 6 slices uncooked bacon

Marinade

  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

Preparation

  1. Whisk together chicken broth, soy sauce, honey, brown sugar, ground ginger, garlic powder, onion powder, black pepper and salt in a large bowl

  2. Pat chicken dry with paper towels and place in the marinade for 20-30 minutes, flipping if necessary for even coverage; alternatively, marinate overnight by placing chicken and marinade in a resealable plastic bag and refrigerating up to 24 hours

  3. Preheat oven to 400℉

  4. Wrap each chicken thigh with a bacon slice, keeping the thighs flat by folding thinner parts under if necessary, and secure with toothpicks without overlapping the bacon

  5. Place the bacon-wrapped chicken on a baking sheet and brush with any leftover marinade

  6. Heat olive oil in an oven-safe pan over medium heat, arrange the chicken without overcrowding, and cook until bacon crisps, about 3 minutes per side

  7. Pour remaining marinade around the chicken in the pan and bring to a boil, then turn off the heat, transfer the pan to the oven, and bake until chicken reaches 165℉, about 10 minutes; brush with any remaining sauce

  8. Remove from oven, rest for 5 minutes, and serve hot
