Crispy Chicken with Orange Sauce
Ingredients
Chicken
- 300 grams chicken fillet
- 5 cloves crushed garlic
- 2 tablespoons orange juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Batter
- 3 tablespoons flour
- 3 tablespoons starch
- 5 tablespoons rice flour
- 1 cup water
Sauce
- 1/2 cup orange juice
- 3 tablespoons soy sauce
- 3 tablespoons vinegar
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ginger powder
- 1 teaspoon chili powder
- 1 teaspoon paprika powder
- 1 teaspoon chopped chili
- 1 tablespoon orange zest
Starch mixture
- 2 tablespoons starch
- 2 tablespoons water
Garnish
- chopped green onion
- orange zest
Preparation
Cut the chicken into 1-inch cubes, place it in a bowl, add the garlic, juice, salt, pepper, and paprika, and leave it in the refrigerator for several hours
In a bowl, place the flour, starch, and rice flour, and gradually add water to make a liquid batter
Place the chicken in the batter and stir to mix
In a bowl, place the sauce ingredients and set aside
In a bowl, place the starch and water, stir to mix, and set aside
Heat oil in a deep skillet
Using tongs, take a piece of chicken and drop it into the oil, repeat this process
Stir the chicken until it firms up and turns white
Remove the chicken and let it cool slightly on a rack
Return the chicken to the oil and continue frying until it becomes golden brown
In a deep skillet, place the sauce, heat until it boils, add the starch mixture, and stir to make a thick sauce, let it boil while continuing to stir
Add the crispy chicken to the sauce and stir until it is fully coated and absorbs all the sauce, becoming glossy
Place the chicken on a serving dish, sprinkle with green onion and orange zest, and serve
