Chinese Chicken Stir-Fry with Vegetables
Ingredients
- 4 pieces chicken fillet
- 2 tablespoons cornstarch
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 teaspoon salt
Vegetables
- 1 tablespoon ginger slices
- 4 cloves garlic, sliced
- 2 stalks green onion, sliced
- 1 green bell pepper, julienned
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 2 medium zucchini, julienned
- 4 medium mushrooms, sliced
- 6 baby corn
- 2 medium carrots, julienned
- 1 medium onion, cut into pieces
- 1 teaspoon crushed chili
- 1/2 teaspoon sesame seeds
Garnish
- Green onion leaves
Preparation
Cut the chicken into 1-inch cubes. Sprinkle with cornstarch, paprika, pepper, and salt. Mix well to distribute.
In a wide skillet, add oil to about 1 cm height. Fry the chicken until golden. Place in a strainer and set aside.
Use the same oil, take about 2 tablespoons, and put it in a wide skillet.
Add ginger, garlic, onion, bell pepper and stir until fragrant and not changed color.
Add the chicken, 2 cups of water, soy sauce and oyster sauce, and let it cook for 10 minutes until you have a thick sauce.
Add zucchini, mushrooms, baby corn, and carrots and stir for one minute.
