Sweet and Sour Chicken Stir-Fry

Ingredients

  • 2 tablespoons corn oil
  • 4 pieces chicken breast fillets
  • 3 cloves crushed garlic
  • 3 large tomatoes, seeded and cubed
  • 3 large cucumbers, seeded and cubed
  • 6 slices pineapple, cubed
  • 2 green onions, sliced

Sauce

  • 2 cups vinegar
  • 1.5 cups sugar
  • 1 cup ketchup
  • 1 teaspoon salt

Preparation

  1. Heat oil in a medium-sized pot over medium heat. Add chicken and stir until golden brown. Remove chicken and set aside in a side dish.

  2. Add garlic and stir until browned. Return chicken and stir for a few seconds. Add tomatoes, cucumbers, pineapple, and green onions. Stir until vegetables soften.

  3. Add the sauce. Cover the pot and let the chicken cook for 15 minutes.

  4. Serve sweet and sour chicken with rice or noodles.

Sauce

  1. In a stainless steel pot, combine vinegar and sugar. Heat over medium until boiling. Reduce heat and simmer for 10 minutes until thickened. Add ketchup and salt, and boil for one more minute.
