Homemade Sweet and Sour Stir-Fry
Ingredients
Sweet and sour sauce
- 1/2 cup pineapple juice
- 1/2 cup chopped pineapple
- 1/4 cup tomato paste (single concentrated)
- 1/4 cup rice vinegar
- 1/4 cup maple syrup (less to preference)
- 1 small piece of ginger (about 1/2 tbsp grated)
- A couple of garlic cloves
- 2 tbsp coconut aminos or light soy sauce
- 2 tbsp corn starch
- 1 cup of water
- Salt to taste
- Ground chili flakes (optional)
Stir-fry components
- 1 cup Soy curls
- Broccoli
- Multi-colored peppers
- Carrot
- Sweet onion
- Chopped pineapple
- 1/2 tbsp coconut oil
Preparation
Sauce
Add all ingredients to a blender and blend until smooth
Bring sauce to a boil in a small saucepan, stirring continuously until it has thickened
Add additional salt to preference and chili for some extra kick if desired
Stir-fry
Heat coconut oil in a skillet over medium heat
Cook soy curls until browned and heated through
Add vegetables and stir-fry until slightly softened
Pour in the sweet and sour sauce and heat through until everything is well combined
Serve over jasmine rice
Tips
You can use coconut sugar or another type of sugar instead of maple syrup
If needed, add more water to thin out the sauce
Add sauce to your stir-fry or use as a dipping sauce for spring rolls
Store remaining sauce in the fridge
