Soy Garlic Chicken Stir-Fry
Ingredients
- 4 medium-sized cubed chicken fillets
- 3 tablespoons cornstarch
- 1 teaspoon corn oil
- 3 cloves garlic, crushed
- 1/2 to 1 teaspoon vinegar
- 1/4 cup water or broth
- 1 teaspoon sugar
- 5 tablespoons soy sauce
- 6 green onions, chopped
Garnish
- Red pepper slices
- Parsley
Preparation
In a deep bowl, place the chicken and starch, and mix to coat well.
In a wide skillet, add the oil and heat over high heat, then add the chicken and stir until golden.
Add the garlic and stir until golden.
Add the vinegar, water, sugar, and soy sauce; stir for a minute, cover, and cook for 7 minutes.
Add the green onions and cook with the chicken for 3 minutes until slightly softened.
Transfer to a deep serving dish, sprinkle with red pepper and parsley, and serve with rice and vermicelli.
