Creamy Tuscan Chicken with Spinach
Ingredients
- 4 large chicken breast fillets
- 1/2 cup olive oil
- 1/4 cup flour
- 2 teaspoons paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Sauce
- 1 medium onion
- 1 large red bell pepper, cut into quarters and then thin strips
- 1 teaspoon oregano
- 1 teaspoon marjoram
- 3 cloves garlic, crushed
- 1 tablespoon tomato paste
- 1 tablespoon vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 cup liquid cream
- 10 cherry tomatoes
- 1/4 cup parmesan cheese
- 2 cups chopped spinach
Preparation
Heat the oven to 180 degrees Celsius and prepare a baking dish by oiling it
In a bowl, mix the flour, paprika, chili powder, black pepper, and stir to combine
Coat the chicken fillets completely in the paprika mixture
In a skillet, heat a quarter cup of olive oil over medium heat, add the chicken fillets, cook until the bottom is browned, flip, and cook the other side until browned
In the same skillet, add more olive oil, add the onion, and stir until wilted
Add the bell pepper and stir until wilted
Add the oregano, marjoram, garlic, tomato paste, vinegar, salt, black pepper, and stir with a wooden spoon to mix
Add the chicken broth and cream, and let it simmer for 4 minutes
Add the cherry tomatoes, parmesan cheese, and chopped spinach, and stir until slightly wilted
Return the chicken to the sauce, let it simmer for a few minutes, then serve
