Chocolate Orange Brownies

Ingredients

  • 150g dark chocolate (70% cocoa solids), chopped
  • 175g unsalted butter, chopped
  • 3 medium eggs
  • 200g coconut palm sugar
  • zest of 1 orange
  • 75g plain flour
  • 40g cocoa powder
  • icing sugar to dust

Preparation

  1. Melt the chocolate and butter together in a heatproof bowl over a pan of barely simmering water

  2. Once melted, lift the bowl off the pan and set aside to cool for 20 mins

  3. Preheat oven to 180°c/160°c fan and lightly grease and line a 20cm square tin with baking parchment

  4. Beat the eggs, palm sugar and orange zest together using a handheld electric whisk in a large bowl until thick and moussey - 4-5 mins

  5. Add the melted chocolate mixture to the egg bowl and fold together

  6. Sift over the flour, cocoa powder and fold together

  7. Transfer the mixture into the baking tin, level off and bake for 30 mins or until there is no wobble left when you gently shake the tin

  8. Cool completely in the tin before dusting with icing sugar, if using, and cut into squares
