Chocolate and Beetroot Cake

Ingredients

  • 50g cocoa
  • 175g plain flour (can be gluten free)
  • 1.5 tsp baking powder
  • 150g sugar
  • 250g beetroot
  • 3 eggs
  • 100g butter
  • 100g dark chocolate

Preparation

  1. Preheat oven time Gas Mark 4/180C

  2. Peel the uncooked beetroot, grate it (best in a food processor or you get very pink hands

  3. Sieve the flour and cocoa into a food processor, add baking powder and sugar and mix

  4. Melt the chocolate and butter in the microwave or over a pan of boiling water

  5. Add the eggs to the flour mix, one at a time, next add the melted chocolate and butter

  6. Mix in the beetroot

  7. Now spoon into a greased, lined loaf tin

  8. Bake for 50-60 minutes

  9. Test using a skewer and when it comes out clean the cake is down! Leave it cool and enjoy
