Chocolate and Beetroot Cake
Ingredients
- 50g cocoa
- 175g plain flour (can be gluten free)
- 1.5 tsp baking powder
- 150g sugar
- 250g beetroot
- 3 eggs
- 100g butter
- 100g dark chocolate
Preparation
Preheat oven time Gas Mark 4/180C
Peel the uncooked beetroot, grate it (best in a food processor or you get very pink hands
Sieve the flour and cocoa into a food processor, add baking powder and sugar and mix
Melt the chocolate and butter in the microwave or over a pan of boiling water
Add the eggs to the flour mix, one at a time, next add the melted chocolate and butter
Mix in the beetroot
Now spoon into a greased, lined loaf tin
Bake for 50-60 minutes
Test using a skewer and when it comes out clean the cake is down! Leave it cool and enjoy
