Chocolate Mousse Cake

Ingredients

Cake

  • 4 large eggs
  • 4 tablespoons melted butter
  • 4 tablespoons all-purpose flour
  • 4 tablespoons cocoa powder
  • 1 tablespoon baking powder
  • 4 tablespoons caster sugar

Mousse

  • 250 grams dark chocolate
  • 250 grams heavy cream

Preparation

  1. Beat the eggs with a mixer for about 4 minutes until pale and slightly thick.

  2. Add the melted butter and beat again until well combined.

  3. In another bowl, combine the flour, cocoa powder, and sugar.

  4. Pour the egg mixture into the dry ingredients and stir gently until smooth, then add the baking powder and stir again.

  5. Preheat the oven to 180°C and grease an 18cm round cake pan with removable bottom using butter and a little cocoa powder.

  6. Pour the batter into the pan and bake for 20 minutes, then allow to cool completely.

  7. Whip the heavy cream with a mixer until stiff peaks form.

  8. Melt the chocolate using a double boiler or microwave and let it cool slightly.

  9. Pour the melted chocolate into the whipped cream and fold gently until well combined.

  10. Spread the mousse over the cooled cake.

  11. Refrigerate for at least one hour or until set.

  12. Remove from the pan, slice, and serve.
