Peanut Butter Stuffed Brownies

Ingredients

  • 350g approx peanut butter
  • 185g unsalted butter
  • 185g dark chocolate (Lindt)
  • 85g plain flour
  • 40g cacao powder
  • 100g white chocolate
  • 3 large eggs
  • 275g golden caster sugar

Preparation

  1. Line baking tin with baking paper and add a thin layer of peanut butter (about 250g); freeze until solid

  2. Break dark chocolate into small chunks and melt with butter in a microwave, 1 minute at a time until fully melted; leave to cool

  3. Preheat oven to 160°C fan and grease and line a 20cm square baking tin

  4. Whisk eggs and sugar with an electric whisk until mixture doubles in volume and is thick and creamy

  5. Pour cooled chocolate-butter mixture into egg-sugar mixture and gently fold to mix

  6. Sieve flour and cacao powder and gently fold into the mixture

  7. Roughly chop white chocolate and add to the mix

  8. Fold ingredients gently to avoid knocking out air

  9. Pour half the mixture into baking tin, add frozen peanut butter layer, and top with remaining mixture

  10. Bake in oven for about 25 minutes or until shiny crust forms and sides begin to pull away
