Peanut Butter Stuffed Brownies

Ingredients

  • 350g (approx.) peanut butter
  • 185g unsalted butter
  • 185g dark chocolate
  • 85g plain flour
  • 40g cacao powder
  • 100g white chocolate
  • 3 large eggs
  • 275g golden caster sugar

Preparation

  1. Line your baking tin with baking paper and add a thin layer of peanut butter, then freeze this layer until solid and set aside

  2. Break the dark chocolate into small chunks and melt it with the butter in a microwave, heating in 1-minute intervals until fully melted, then allow to cool

  3. Preheat the oven to 160°C fan and grease or line a 20cm square baking tin

  4. Whisk the eggs and sugar with an electric whisk until the mixture doubles in volume and becomes thick and creamy

  5. Pour the cooled chocolate and butter mixture into the egg and sugar mixture and gently fold to combine

  6. Sieve the flour and cacao powder and gently fold them into the mixture

  7. Roughly chop the white chocolate and add it to the mixture

  8. Fold in the ingredients gently to avoid knocking out the air

  9. Pour half the brownie mixture into the baking tin, add the frozen peanut butter layer, and then pour the remaining brownie mixture on top, then bake in the oven for about 25 minutes, checking and adding a few more minutes if needed, until it has a shiny papery crust and the sides are just beginning to come away

Serving suggestions

  1. Serve warm with vanilla ice cream or clotted cream
