Creamy Avocado Cashew Pasta with Garlic Mushrooms

Ingredients

  • 1 avocado
  • 1 clove of garlic
  • 1 handful fresh basil
  • 2 tbsp cashew butter
  • 1 tbsp nutritional yeast
  • Juice of 1 lemon
  • 1 tbsp water
  • salt
  • black pepper
  • Pasta of choice (e.g., wholegrain rice noodles)
  • Mushrooms
  • Tamari
  • Sesame seeds
  • Cashews for roasting

Preparation

  1. Put all sauce ingredients into a blender and blend until creamy. Season well with salt and black pepper.

  2. Combine the sauce with cooked pasta of your choice.

  3. Roast cashews in a pan and sprinkle on top.

  4. Slice mushrooms, fry them in a pan with tamari, and add sesame seeds and crushed garlic.
