Creamy Avocado Cashew Pasta with Garlic Mushrooms
Ingredients
- 1 avocado
- 1 clove of garlic
- 1 handful fresh basil
- 2 tbsp cashew butter
- 1 tbsp nutritional yeast
- Juice of 1 lemon
- 1 tbsp water
- salt
- black pepper
- Pasta of choice (e.g., wholegrain rice noodles)
- Mushrooms
- Tamari
- Sesame seeds
- Cashews for roasting
Preparation
Put all sauce ingredients into a blender and blend until creamy. Season well with salt and black pepper.
Combine the sauce with cooked pasta of your choice.
Roast cashews in a pan and sprinkle on top.
Slice mushrooms, fry them in a pan with tamari, and add sesame seeds and crushed garlic.
