Easy Gooey Vegan Blondies

Ingredients

Wet

  • One 15 oz can chickpeas rinsed and drained (265 g)
  • 1/2 cup plant-based milk (120 ml)
  • 1/2 tbsp apple cider vinegar
  • 1/3 cup nut butter or seed butter of choice (80 g)
  • 2 tsp vanilla extract

Dry mix

  • 1/2 cup xylitol or sugar of choice (100 g)
  • 3/4 cup ground almonds (90 g)
  • 4 tbsp ground flax seeds (28 g)
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup dairy-free chocolate chips + more for the top (60 g)

Preparation

  1. Preheat oven to 180°C

  2. Line a baking pan with parchment paper

  3. Blend the wet ingredients until smooth in a blender or food processor

  4. Mix the dry ingredients together in a bowl

  5. Combine the wet and dry mixtures until well incorporated

  6. Fold in the chocolate chips

  7. Pour the batter into the prepared pan and sprinkle additional chocolate chips on top

  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean
