French Toast with Yogurt, Chia, and Blueberries

Ingredients

  • 1-2 bread slices
  • 1 egg
  • yogurt (dairy or dairy-free)
  • blueberry jam or warmed blueberries
  • chia seeds

Preparation

  1. Beat the egg into a shallow bowl.

  2. Dip both sides of the bread slices into the egg until well covered.

  3. Heat a non-stick pan and add oil if desired.

  4. Fry on both sides until golden brown.

  5. Top with yogurt, blueberry jam, and chia seeds.

Blueberry jam alternative

  1. Warm fresh or frozen blueberries in a pan.

  2. Simmer for a bit and add chia seeds to make a blueberry chia jam.
